Brown Swiss

Brown Swiss trace to the Alpine valleys of Switzerland, and they are among the oldest dairy breeds anywhere, with the type recorded for centuries before herd books existed. American breeders took the imported stock and selected it hard for milk, which is what separated it from the dual-purpose Braunvieh it came from.

They are large, solid grey-brown, and known for two things. The milk has a fat-to-protein ratio that cheesemakers specifically want, and the cows are long-lived and structurally sound, with good feet and legs and a docile temperament that shows up in how they handle.

They also tolerate heat better than a Holstein.

The trade is patience. Brown Swiss mature slowly and reach their best production later than other dairy breeds, so a heifer costs you more time before she starts paying, and a farm turning stock over quickly will not see the return.
